CHARK FARM
Farm: Chark Farm Farmer: Clive Littleton Chark Farm is a 10-minute drive from the A30, but rolling hills - home to the farm's 200-strong dairy herd - are all the eye can see.
The Littleton family has been farming in Cornwall since 18th century. Clive Littleton bought Charks Farm in 1991 and lives on the farm with his wife Jennie and three children Peter, Rebecca and Martin.
With its herd of Freisan cows, Chark Farm produces 1.5 million litres a year and supplies Trewithen Dairy with milk for Kelly's of Cornwall Ice Cream.
The cows are milked at 3:30am and return to the lush grass in the summer for the rest of the day. A second milking session takes place 12 hours later before the cows rest on a comfortable mattress and sand, exactly like resting on the beach!

TREWITHEN DAIRY
Farm: Trewithen Dairy Farmer: Francis Clarke Trewithen Dairy is a family business which has been supplying all the milk and clotted cream for Kelly's of Cornwall Ice Cream for more than ten years.
Based on the edge of Bodmin Moor, Trewithen Dairy is a third generation family business owned by Bill and Rachel Clarke, together with their son, Francis. Today 10 farms in the area (all within a 20 mile radius) supply Trewithen with milk produced from cows fed on the lush Cornish grass. The family still grow its own cereals on the land which are in turn supplied back to partner farms for winter feeding the cows and the land provides summer grazing.
Trewithen Dairy has a contract with all its farmers, ensuring security of business and also paying a price above the market rate, reflecting the quality and strict welfare standards which are required.
The milk for the clotted cream for use in Kelly's ice Cream is bought in every evening. The milk is then pasteurised, the cream taken off and the cream then slowly heated in a vat up to 60C. The cream is then put into a 9 kilo box and chilled before delivering to Kelly's.
At the summertime peak Trewithen supplies Kelly's with 17,000 litres of milk per day.
